Seasoning - lamb
Sumac - Cumin - Mustard
A dry, salty seasoning with citrus fruit notes. Contains seasoning for 2-3 family sized meals. Use this seasoning to flavour your next lamb or mutton dish. Try on lamb chops, roasted leg or sauteed lamb’s liver. Or season potato wedges, grilled white fish or a simple tomato salad.
Spice level: mild.
RECIPE SUGGESTION: Lamb's kidneys with broccolini and pickled onions
INGREDIENTS: 5 lambs' kidneys, halved, 3 tbsp cocktail onions, 1 bunch broccolini, 30g Wild Fennel Co. sheep seasoning, zest of one lemon, 1 tbsp chopped fresh thyme, 1 garlic clove crushed, olive oil for frying, butter.
METHOD: Heat a frying pan up on the stove with a little olive oil. Once hot add kidneys and caramelise for 2 minutes on either side.
Then add the garlic, broccolini, lemon, thyme, cocktail onions and a healthy sprinkle of the lamb seasoning. Cook until the broccolini starts to wilt, add the butter, toss and serve.
