Wild Fennel Co. is a range of gourmet meat rubs designed and produced in New Zealand by chef Dan Pearson, formerly of Bracu and pop-up restaurant Egg & Spoon.
A meat rub is a blend of herbs, spices, sugars and salts used to flavour meat. Unlike a marinade, a dry meat rub will caramelise in the pan and seal in all the flavour and juices. Our rubs are most ideally suited to the animal pictured on the front of the packaging, but the great thing about cooking is there are no rules - experimentation is key! Simply massage / coat / sprinkle onto your meat prior to cooking.
